Go to View->Current View

The view type of "Messages" is the default.  Either use the "Define
Views" option to make changes to the "Messages" view, or go to a folder
that you have customized, and go to View->Current View->Save Custom View
and save it over the Messages view.

Then new folders will have the settings you want.
