[Users] Changing device names in System:///

At a quick glance, I suspect nautilus is getting those names from
gnome-vfs, and I'm not sure how easy/practical it is to customize them. 
I think it's figuring out somewhat dynamically what devices are present
(to accommodate things like the Flash reader not being there all the
time) rather than storing the information on what devices are present. 
That being the case, I don't think the information on devices is
actually stored on disk anyplace, which makes configuring names rather
impractical.  If you want the current behavior changed, my advice is to
file a bug against nautilus.
